National Vegetarian week (15-21 May) is the perfect excuse to give these stunning meat-free dishes a whirl. Full of texture, flavour and colour, you won’t feel like you’re missing out. Mediterranean vegetable and goat’s cheese galette Makes: 1 x 10 inch pie Ingredients: 300g plain flour 150g salted butter, cubed 3 tbsp cold water 1 packet of prepared Mediterranean vegetables (400g) or a mix of fresh – chopped into chunks 150g soft goat’s cheese, cut into slices 1 egg Salt and pepper Method: 1. Preheat the oven to 200C (fan). 2. In a large mixing bowl, rub the flour and butter with your fingers until a crumb consistency is achieved. Add the water and stir together to form a pastry dough. 3. Tip the dough out onto the lined baking tray and roll out into a large oval/circle shape (2-3mm thickness). 4. Arrange a layer of goat’s cheese slices in the centre of the pastry, top with the vegetables and then fold in the edges to encase everything. Place a few additional goat’s cheese slices on top of the vegetables. 5. Beat the egg and use a pastry brush or your finger to egg wash the folded pastry edges before seasoning the whole galette with salt and pepper. 6. Bake for 30 minutes until the pastry is golden, allow to cool slightly and serve. Red pesto and parmesan dough knots Makes: 8 knots Ingredients: 1 packet fast action dried yeast (7g) 220ml warm water 400g strong white bread flour 1 tbsp white sugar 1 tsp salt ½ jar red pesto 170g cheese of choice, we recommend parmesan Method: 1. Preheat the oven to 180C (fan). 2. In the measuring jug, combine the warm water and yeast. Stir and set to one side for 2-3 minutes to activate the yeast. 3. In a large mixing bowl, combine the flour, sugar and salt. Pour in the yeast and water and stir them together with your hand to form a dough. 4. Sprinkle your worktop with a little flour and knead the dough until smooth, then return to the large mixing bowl, cover and leave in a warm place for at least 15 minutes to prove (this is where it will start to grow in size). 5. Using your fist, knock the dough back (this means push the dough back down to its original size) and tip out onto a floured worksurface before rolling into a large rectangle shape (about 5mm thickness). 6. Spread the red pesto on half of the rectangle, grate a thin layer of cheese on top and then fold the over half of the dough over the pesto and parmesan. 7. Cut the dough into 1 inch wide strips, then, holding each end, twist and knot each one before placing onto a lined baking tray. 8. Bake for 15-20 mins until risen and evenly browned then remove from the oven, allow to cool slightly, grate more cheese on top and serve. Savoury crêpes Makes: 6 crêpes Prep time: 5 mins | Cook time: 30 minutes Ingredients: 2 large eggs 200ml milk 120g plain flour Butter for greasing pan For the fillings: Grated cheese and mushrooms (sliced and pan fried in butter – but these can be made with any filling of your choice!) Method: 1. In the large mixing bowl, combine the eggs, milk and flour with the whisk to form a runny batter. 2. Place your pan over medium heat and grease lightly with butter before spooning in about 2-3 tbsp of batter and swilling it around to form a thin, even crêpe. 3. Return the pan to the heat and leave to cook for 30 seconds, then using the spatula, or flipping if you feel confident to, flip the crêpe over and cook the other side for a further 30 seconds. 4. Place the crêpe on a plate and repeat steps 2 and 3 until all of the batter has been used, stacking them up as you go. 5. To fill, take one of the crêpes, place it back in the pan and sprinkle with grated cheese and mushrooms. Leave for 30 seconds, then fold the crêpe in half and then half again to create a quarter fold. Porn legend-turned-Twitch star Adriana Chechik has revealed that she’s being so badly swatted, she’s going to have to move house. On Saturday, the adult entertainer issued a damning rebuke of “beyond childish” pranksters, who have been blighting her life for months. In a furious tweet, Chechik, 31, explained that the emergency services had been called to her house on 12 separate occasions, as she urged the culprits to “grow up”. “Y’all suck so hard. I’m gonna have to move with this swatting sh*t,” she wrote. It involves a troll finding out their victim’s address or location and then making a hoax phone call to the emergency services, claiming that there’s extreme violence taking place there. The idea is to make the lie sound as urgent and threatening as possible to prompt an armed response – hence “SWAT”. The perpetrator then keeps their fingers crossed that the police will raid the home during the streamer’s broadcast so that they can watch the dramatic action unfold live on camera. And whilst some would argue that swatting is just an elaborate prank, most will tell you it is, in fact, a dangerous crime that puts lives at risk. In one high-profile instance back in 2019, a teenage Call of Duty player swatted an opponent after losing a game. Police showed up at the wrong address, then shot and killed a totally innocent father-of-two. It is also, as Chechik pointed out in her tweet, a complete waste of the emergency services’ time, that should be dedicated to legitimate crises. One of the most horrific aspects of the 31-year-old’s plight is that she was attacked by swatters even as she recovered from a near-life-threatening injury. In October last year, she broke her back in two places after jumping into a foam pit at TwitchCon, San Diego, which left her facing months of surgery and gruelling rehabilitation. She also lost her unborn child as a result of the accident – later revealing that, unbeknownst to her, she was pregnant at the time. And yet, some of her followers – who seem unfamiliar with the very concept of human decency – decided it would be fun to ambush her. In December, as Chechik lay bedbound, she tweeted: “Tell me how some internet trolls are gonna swat a person whose back is still healing from being broken. Some twitch chatters are a whole different breed of small d**k idiots. “The cops know me now. We legit talk about our life because this happens so much.” Based on her latest complaint, the situation has only escalated since then. But, at least, she suggested action is being taken to find those responsible. One of her fans responded to her tweet, saying: “Moving I think would only give you a brief respite from the bampots, and then it would start again. Time to get a lawyer and PI involved and start to sue the c**p out of both the city for having inadequate response to being repeat called and the people calling them on you.” Chechik replied simply: “[Already on it!!]” Of course, this is not a game, but we hope she nails those swatters once and for all. Italian fashion designer Giuliano Calza has called on shoppers to boycott Chinese fast fashion retailer Shein or “accept mediocrity”. The co-founder of streetwear label GCDS, which stands for “God Can’t Destroy Streetwear”, posted a statement on Instagram accusing the retailer of “stealing” his shoe design. Shein, which is known for selling cheap clothes, has been embroiled in numerous copyright infringement lawsuits by designers and artists over the years. Calza said that the retailer’s actions were “hurtful and abusive” and accused it of “stealing ideas, stealing sweat, stealing love and [months] of dedication and stealing the energy of making [sic] new ideas come to life”. He wrote: “Imagine them coming into your house or your mind and making your things, your dreams… THEIRS.” The designer also addressed shoppers who may complain his garments and accessories are “too expensive” and therefore they shop on Shein. “Because I respect humans, I respect hard work and workers, I use ethical way of productions and materials [sic],” he said, after earlier accusing the retailer of “killing the planet with… dehumanising policies that make [these] prices possible”. He posted screenshots of a pair of silver wedge heels on Shein’s website, which have the same stylised heel as the Morso heels, available on the GCDS website for US$875. It is unclear how much Shein’s version of the shoes are, and they appear to have been removed from the site. The Independent has contacted Shein for comment. Calza continued in his post: “I try to stay human, I try to make my country a place where this industry can live for young people like me, but in this time maybe I’m wrong, maybe I am the fool.” The designer, whose brand has been worn by Beyonce, Bella Hadid, Dua Lipa, Pamela Anderson, and other celebrities, said that “what hurts the most is people tagging me [on these] shoes and expecting me to congratulate them or repost”. “It’s very sick. If you want creativity and young people to continue [surviving] and see them succeed, do not be a part of their game,” he added. In his caption, Calza wrote: “Boycott Shein or accept abusive behaviour, accept stealing and accept the planet where you live, to burn in shame and fear [sic]. “Accept mediocrity and be part of killing someone else’s dreams.” In 2021, Shein was accused of “deliberate and calculated” trademark infringement by a number of major and independent brands, including AirWair International, owner of Dr Martens. The complaint, filed in California, accused the retailer of having a “clear intent to sell counterfeits”. Shein denied the claims, and has denied other claims of alleged infringement.
