Diwali 2023: The symbolic foods eaten during the Festival of Lights
Diwali, the festival lights, sees millions of people attend events across the world every autumn to celebrate the triumph of good over evil. Celebrated by Hindus, Sikhs and Jains, Diwali is one of the most significant festivals in Indian culture and calls for a number of traditional dishes. From the popular sweet treats to the savoury main meals, here are some of the key foods eaten over the course of the five-day celebration, which this year begins on Sunday 12 November. Mithai South Asian sweets and desserts are called mithai and are a staple part of Diwali celebrations. Many of the treats are fried foods made from sugar, chickpea flour and condensed milk. They vary between regions but common ones include balushahi, which are a bit like doughnuts, laddoos and barfis. They can be eaten alongside savoury items or eaten alone as a snack. It is custom to exchange decorated boxes of mithai among family and friends during Diwali. Chivda Snacks are a fundamental part of the Diwali menu and many of them come in the form of chivda, a spiced Bombay mix that consists of a variety of dried ingredients, such as peanuts, chickpeas, fried onion and fried lentils. Sometimes, it’s eaten as part of a meal but most of the time it’s enjoyed on its own as a snack. Lapsi Halwa This sweet dish is often eaten on the very first day of Diwali and is made from large-grain cracked wheat, which is then cooked with ghee and sweetened with sugar and cardamom powder. It’s incredibly popular and is often served with a yardlong bean curry, as the beans are thought to represent longevity. Aloo Tikki These small, fried patties are made from shredded potatoes and are usually served alongside regional sauces, such as mint sauce or tamarind sauce. They look and taste a bit like potato pancakes and are usually crispy on the outside and soft on the inside, making them an irresistible traditional Indian delicacy. Samosas Though they’re eaten all year round, samosas peak in popularity around Diwali. The fried pockets of pastry usually come in the shape of a triangle and are stuffed with either mince meat, lentils or vegetables. Because Diwali is all about celebrating the sweetness of life, special sweet versions are often made to mark the festival, containing ingredients such as coconut, cardamom and of course, sugar. Wendy’s announces free chicken nuggets for the rest of 2023
Wendy’s will be offering a free treat to help people get through the middle of the week for the rest of the year. Starting on Wednesday 8 November, the fast food chain will be giving away free packs of six chicken nuggets with any purchase on every Wednesday until 2024, according to a press release. To get your free treat, the chain is asking customers to redeem the offer using their app or website, or they can also scan the digital Wendy’s Rewards offer code in their respective Wendy’s restaurant. This offer is only available through the next eight weeks. The fast food chain is also offering a special deal for Uber Eats customers. If they purchase a 10-piece pack of chicken nuggets between 6 November and 12 November, they will get a second one for free. Another deal is available for DoorDash customers too. If they add a Dr Pepper to their order between 16 November and 22 November, they will be able to earn $5 off an order that is $20 or higher. This isn’t the first time the brand has decided to give away free items. On 27 October, when Taylor Swift released the re-recording of her album titled “1989”, Wendy’s gave away fries in all sizes to celebrate the album when customers purchased a small Frosty or larger using the app. Wendy’s will be bringing back a fan-favourite menu item just in time for the holiday season in addition to all of their deals. Starting on 14 November, the restaurant will bring back the peppermint Frosty that was first added to the menu last year. When initially released, this was the first-ever holiday-flavoured Frosty the chain had added to its menu. With this new seasonal menu item comes the end of their current seasonal menu item, the pumpkin spice Frosty, which has been on the menu since 12 September. Wendy’s won’t be the only fast food restaurant ringing in the holiday season with free food. Dunkin’ Donuts also recently announced that they would be giving out free doughnut on Wednesdays from 1 November to 31 December. What does the 2024 Met Gala theme ‘Sleeping Beauties’ actually mean?
No – celebrities won’t be wearing pajamas at the 2024 Met Gala. Yesterday, Vogue announced the theme of The Costume Institute’s 2024 exhibition at The Metropolitan Museum of Art and the Met Gala motif entitled, “Sleeping Beauties: Reawakening Fashion.” The reveal was met with a myriad of confused individuals online, predicting a display of designer jammies on the red carpet for the famed opening as well as a parade of princesses on the museum steps thinking “Sleeping Beauties” was a reference to the classic Disney animation. Yet, neither are correct. So, if the theme doesn’t call for nighties or knights, what does “Sleeping Beauties: Reawakening Fashion” mean? First, let’s dive into the intention of the exhibit. The new exhibit promises to display 250 archive pieces from the Costume Insititute’s permanent collection, some of which date back 400 years to the Elizabethan period. According to Andrew Bolton, Wendy Yu Curator in Charge of The Costume Institute, the entire exhibit is centered around 50 historical garments, latent and so fragile they can never be worn again – the “sleeping beauties” of the exhibit. The main motivating piece was a Charles Frederick Worth original, an 1877 silk satin ball gown. Each delicate piece, some no longer in their true form, will be reimagined inside innovative casings made to bring the garments back to life. While the inherent movement of each piece is apparent even in a state of stillness, CGI, soundscaping, light projection, the illusion technique Pepper’s ghost, and video animation will be installed to propel these pieces out of their shelling. Just as a 17th century bodice is said to be contextualised next to a modern acquisition, each archival treasure will be juxtaposed with more current designs from lauded creatives like Stella McCartney, Phillip Lim, Yves Saint Laurent, Elsa Schiaparelli, and Christian Dior, all mimicing the same structural concept of its counterpart. Through careful curation, the organic essence of each textile piece will be categorised under three “zones” or sections – land, sea, and sky. By doing this, the idea is to highlight views of the natural world, how perception of these areas has changed, and how they’ve been configured in fashion. In other words, we’ll get to see the evolution of nature and how it’s been developed by industry inventors. Notable pieces by Alexander McQueen like the razor-clam shell dress from the 2001 “Voss” spring/summer collection and the mesmerising butterfly dress from Sarah Burton’s first collection at the fashion house in 2011, will be featured. Overall, “Sleeping Beauties: Reawakening Fashion” intends to dig up tangible pieces of history, some of which were put to rest years ago, to motivate conversation about natural elements and emotion, as well as pay homage to the intimacy between a garment and its wearer with the transformative power of current technology. Based on the aim of the exhibit, we can expect to see the A-listers attending the Met Gala – the annual Costume Institute benefit held on the first Monday in May – in custom-made or revived period pieces that channel all or one of the sections. Designers often collaborate with celebrities to come up with renditions of past runway looks, but this time they’ll most likely be imagining traditional structures, built with organic fabrics and materials. The looks should implement a historical aspect, reminiscing on the evolution of fashion in tandem with conversations and feelings about climate and landscape. We may see a lot of creatives tap figures from Elizabethan times, playing with long and full silhouettes. But one guarantee for the Met Gala every year is stars dressing with absolutely no intention of being on theme. So, who knows maybe someone will show up in their matching PJ set. The star-studded guest list pulled out all the fashion stops - Lady Gaga changed her outfit not once but four times on the red carpet alone, while Jared Leto arrived in a custom Gucci suit carrying a replica of his own head. As for Karlie Kloss, the Victoria’s Secret model teased her highly-anticipated outfit on Instagram before walking the red carpet. “Looking camp right in the eye,” she captioned her photo, which showed Kloss’ laser-focused stare into a compact mirror. But when she arrived at the Metropolitan Museum of Art in New York City - alongside her husband, Joshua Kushner - her outfit reveal was not exactly on theme. On 8 November, it was announced that the theme for the 2024 Met Gala will be “Sleeping Beauties: Reawakening Fashion”. The annual fashion fundraiser, which supports the Metropolitan Museum’s Costume Institute, will be centred around 50 historically significant pieces, some of which are far too fragile ever to be worn again - the “Sleeping Beauties”. Nearly 250 items will also be drawn from the Costume Institute’s permanent collection, featuring designs from Elsa Schiaparelli, Yves Saint Laurent, Christian Dior, and Givenchy to span 400 years of fashion history. Three recipes that prove traditional Irish food is better than you think
“I love the sticky sound this steamy pasta makes as you stir through pumpkin, walnuts and blue cheese until it forms a creamy sauce,” says chef Donal Skehan. “It’s proper autumnal food – seek out smaller, sweeter pumpkins with interesting textures and skin colours; they are far more flavourful than the regular large orange ones.” Autumn pasta with blue cheese and nuts Serves: 4 Ingredients: 1 pumpkin or autumn squash (about 1kg), peeled, deseeded and sliced 3-4 sprigs of thyme 1 tbsp olive oil 1 tbsp salted butter 2 onions, thinly sliced 350g pasta shapes, such as conchiglie or rigatoni 100g blue cheese 75g walnuts, toasted and roughly crushed Sea salt and freshly ground black pepper Best-quality extra virgin olive oil, to serve Method: 1. Preheat the oven to 200C/180C fan/400F/gas 6. 2. Place the pumpkin on a large baking sheet with the thyme sprigs and toss in the olive oil until all the pieces are coated. Season generously with salt and pepper. Roast in the oven for 40 minutes, or until tender and caramelised at the edges. Once cooked, keep warm. 3. While the pumpkin cooks, place a large heavy-based frying pan (skillet) over a medium-high heat and add the butter. Add the onions and season generously, tossing to coat completely in the melted butter. Reduce the heat and cook gently until the onions are sweet and caramelised, about 10-15 minutes. 4. Towards the end of the pumpkin cooking time, bring a large pan of water to the boil and generously season with salt. Once boiling, add the pasta and cook until al dente. Drain and reserve a cup of the starchy cooking water for use in the sauce. 5. Increase the heat back up under the pan with the onions, then add the reserved pasta water and bring to a steady simmer. Meanwhile, mash half the cooked pumpkin and add this to the onions. Crumble in almost all of the blue cheese (keep a little back to serve) and stir until you have a smooth, creamy sauce. Working quickly, add the pasta to the pan and stir through until completely coated. 6. Serve the pasta hot in warmed plates topped with the remaining pumpkin slices and blue cheese. Sprinkle with toasted crushed walnuts and top with a generous drizzle of the best-quality extra virgin olive oil you have to hand and a last seasoning of sea salt and black pepper. One-pot Moroccan-style meatballs “There are some recipes that are ideal for making ahead of time and seem to improve in flavour once you plonk them in the fridge for an overnight stay. This is particularly true of a tomato-based meatball stew like this one,” says Skehan. “The spices have an opportunity to mingle with the lamb, the harissa paste has time to develop the deep hum of heat in the sauce, and you are left with a pot of something truly special. “Make these meatballs while you have time on a Sunday night, and all you have to do to make a meal of them is serve them at the table with rice or couscous, and maybe some flatbreads.” If you don’t have a slow cooker, make this in a casserole dish and cook, uncovered, in an oven preheated to 160C/140C fan/320F/gas 3 for one hour. Serves: 4 Ingredients: 450g minced lamb ½ red onion, finely chopped 2 garlic cloves, crushed 1 medium free-range egg 2 tsp ras el hanout 30g fresh white breadcrumbs 1 tbsp finely chopped flat-leaf parsley 2 tbsp olive oil Sea salt and freshly ground black pepper For the sauce: 1 tbsp olive oil ½ red onion, finely chopped 2 garlic cloves, finely chopped 1 heaped tbsp harissa paste Grated zest of 1 lemon 400g tin chopped tomatoes 100ml chicken stock 400g tin chickpeas, drained and rinsed To serve: Handful of flat-leaf parsley, chopped Couscous, steamed Greek yoghurt Flatbreads, charred and torn Method: 1. In a large bowl, mix the lamb with the red onion, garlic, egg, ras el hanout, breadcrumbs and parsley. Season well and with wet hands, shape into 20 walnut-sized balls. 2. Heat the two tablespoons of oil in a frying pan or using the sauté function on the slow cooker and brown the meatballs all over. Transfer to a plate. 3. Now for the sauce. Add the one tablespoon of oil to the pan or slow cooker and gently fry the onion for five minutes, then add the garlic, harissa and lemon zest, and cook for one minute more. 4. Transfer to the slow cooker (if you’re not already using it), then add the meatballs. Pour over the chopped tomatoes and stock. 5. Season well and cook on high for four hours, then add the chickpeas and cook for a further 30 minutes. If the sauce is too juicy at the end, remove the meatballs and reduce to your liking in a pan or using the sauté function on your slow cooker. 6. Serve the meatballs and sauce scattered with parsley, with steamed couscous, a dollop of yoghurt and flatbreads. Irish coffee, hazelnut and chocolate tiramisu Tiramisu is one of Skehan’s “go-to desserts to feed a crowd”. He says: “This version is the latest twist and an homage to that favourite after-dinner treat: Irish coffee topped with whipped cream.” Serves: 6 Ingredients: 400ml double cream 250g mascarpone 4 tbsp caster sugar 75ml Baileys 300ml strong coffee 75ml whiskey 200g Savoiardi sponge fingers 100g hazelnuts, toasted and roughly crushed in a pestle and mortar 75g dark chocolate, grated Method: 1. Put the cream, mascarpone and sugar into a bowl and whisk by hand with a balloon whisk until it is thick and luscious. Whisk in the Baileys and set aside. 2. Mix the coffee and whiskey together in a shallow dish. Dip the sponge fingers into this mixture and put a layer of them into a glass serving dish. Spread over a third of the mascarpone mixture and scatter with a third of the nuts and chocolate. 3. Repeat to make two more layers, finishing with a layer of cream scattered with nuts and chocolate. Chill for at least two hours before serving.
