Coffee-spiced pork shoulder with sweet potato and yuca Serves: 4 Ingredients: For the coffee-spiced pork shoulder: 2 tsp ground cumin 2 tsp sweet paprika 1 tbsp kosher salt 1 tbsp finely ground coffee 1 tbsp granulated sugar ¼ tsp chili flakes, or more to taste 2 tsp annotto seeds, finely ground (if you can’t find annatto seeds, you can substitute with 2 tsp achiote paste) ½ boneless pork shoulder (about 1.3kg) Extra-virgin olive oil For the sweet potato and yuca: 1 red onion, diced into 1.3cm pieces 1 star anise 3 garlic cloves, crushed Kosher salt 1 sweet potato, peeled and diced into 1.3cm pieces 1 yuca, peeled and diced into 1.3cm pieces 1 cup dark rum 3-4 cups chicken stock Method: 1. Prepare the pork shoulder: In a small bowl, combine the cumin, paprika, salt, coffee, sugar, chili flakes, and annatto. 2. Season the pork shoulder with the rub, rubbing it in with your hands to coat evenly. Set the pork shoulder aside to marinate at room temperature for at least 30 minutes. 3. Heat a large Dutch oven over high heat and drizzle the pork with olive oil. Place the pork shoulder in the pot and sear on all sides until caramelised and golden brown. Remove the pork from the pot and set aside. 4. Make the sweet potato and yuca: To the pot, add the onion, star anise, and garlic. Season with salt. Cook until all the ingredients begin to caramelise and the anise is aromatic, about seven to 10 minutes. Add the sweet potato and yuca and saute for five minutes longer, until they start to brown. Add the rum to deglaze the pot, scraping the bottom with a wooden spoon to release all of the brown bits. Simmer until the rum is reduced by half. 5. Finish the pork shoulder: Return the pork to the pot and pour in the chicken stock, making sure the stock comes halfway up the side of the pork, adding more liquid if needed. Bring to a boil, then cover and reduce to a simmer, cooking for about two hours or until the pork easily breaks apart with a fork. Remove the vegetables with a slotted spoon. 6. Once the pork is tender, remove it from the pot and set it on a large plate or cutting board. Pull the pork into large pieces using two forks. 7. Reduce the cooking liquid that remains in the pot by half until slightly thickened. 8. To serve, plate the pork and vegetables on a serving platter and drizzle cooking liquid over top. An former vegan whose hair started to fall out in chunks has claimed that eating meat “saved her life”. Kai-Lee Worsley, who is originally from Edmonton, Alberta, Canada, became vegan aftermoving to Santa Ana, California, in 2018. After moving in with a group of vegans, she learnt about factory farming, which is controversial due to the cramped and stressful conditions endured by livestock. She was then convinced to try veganism herself. “What convinced me is the way animals were treated. I didn’t know how animals were treated in factory farms. I didn’t know factory farms existed,” she said. Kai-Lee stopped eating all products derived from animals and started eating protein-rich vegetables, such as beans and legumes. She also used supplements to counter the lack of proteins found in meat. But six months into her new diet, she started to feel unwell. Her hair started to fall out, her fingernails became brittle and she found it difficult to stand up. “I was extremely tired all the time. I couldn’t form coherent thoughts,” she said. “I would just lie in bed multiple times a week and I would spend all day in bed if I could. “My nails were breaking all the time. My hair was falling out. I have thin hair anyway but my hair was just coming out in chunks.” Kai-Lee stuck to the diet until June 2019 when her symptoms became too intense to ignore. Less than a year after becoming vegan, Kai-Lee started eating meat again and has credited it with “literally [saving] my life”. ”Now I eat basically the same thing as when I was a vegan except I have steak three times a week. I’ve swapped meat substitutes for meat. It has literally saved my life,” she said. Despite feeling the benefits of eating meat, Kai-Lee morally struggled to abandon her vegan diet. Kai-Lee said: “I really thought veganism was something I wanted to do for the rest of my life. I even saw myself as an activist. “After I ate meat, I saw myself as a fraud. I even had a V tattoo in my ear, which stood for vegan. I was at that point when I was so indoctrinated that it was really hard to go back. “I didn’t tell anyone at the beginning. Instead, this (very real) photo has sparked a swirl of rumours concerning rapper 6ix9ine’s sexuality. The picture shows 6ix9ine (who also goes by Tekashi69), planting a kiss on the cheek of Mexican singer Eduin Caz, from the band GroupoFirme. Except that it wasn’t a revelation at all, just proof of the power of a sensationalist headline. In fact, Caz posted the original picture to his Instagram account to mark the release of a new collaboration between Groupo Firme and 6ix9ine. Their track, ‘Y ahora’, is a love song about… a woman. And if you watch the music video, you’ll see the two men getting up-close and personal with a couple of scantily clad ladies. And yet, social media users love to consider themselves masters of hints and easter eggs, so apparently the fact 6ix9ine sports rainbow-coloured braids is enough to suggest he’s a member of the LGBTQ+ community. Others took the opportunity to fuel the rumour that the rapper has indulged in gay porn – under an alias – and that his sex tape was leaked to the internet. However, according to AllHipHop, the actor in said X-rated movie bears merely a passing resemblance to the rapper. Furthermore, the 27-year-old admitted to having a girlfriend on Instagram just three days ago when he posted a gushing birthday tribute to model Ariiela Lalangosta. “HAPPY BIRTHDAY TO MY BESTFRIEND [sic] IN THE WORLD,” he wrote in the caption to a video showing him kissing Lalangosta and showering her with cash. “My girlfriend won’t get mad but we just friends she knows that,” he added. A bride has gone viral after sharing a TikTok showing what she ate at her wedding, and it left viewers shocked. Sam Cutler, a fitness influencer with over 100,000 followers on TikTok, got married last week. To share the moment with her followers, she posted a ‘what I eat in a day’ video, in line with her regular content, but this time it was ‘what I ate on my wedding day’. However, viewers were shocked to see how much restriction and ‘clean eating’ habits were at the forefront of the wedding. The video, which now has over 4 million views, starts off with Cutler having a protein smoothie and some salad whilst getting her hair and makeup done, nothing too out of the ordinary. She also showed a veggie platter that was in the bridal suite for herself and her bridesmaids to snack on whilst getting ready. Whilst it’s quite unlike a lot of other TikToks that show the food at weddings, often with bridal suites having brunches and an array of snacks, viewers weren’t upset yet. The wedding cake was also gluten, dairy, and sugar free, and the bride only drank Cote de Rose because she knew ‘it’s less than 2g/L of sugar.’ People were quick to question the bride’s choice of food and drink for the day, with some saying ‘girl it’s one day you can have sugar’, ‘my jaw dropped’, ‘I would have been starving afterwards’, ‘I thought it wasn’t that bad and then I got to bloat pills part’, ‘diet culture is crazy’. Cutler responded to the backlash she faced, by saying "as women, we should be empowering each other to make the choice that works for our own individual body, without judgement." But many were still critical of Cutler, saying that when you’re giving your guests bloat pills, it’s no longer about individual choice, it’s about you’re making others feel, and the perpetuating of diet culture. Others came from a place of concern, with one user commenting: "not understanding one day of “bad” eating is not going to undo all the work you’ve put in is where things get scary." The video also gained a lot of attention on Twitter with people sharing similar views: Cutler reiterated that she enjoyed her wedding and no one was forced to take the bloat pills, but they were simply there for people who wanted them, or were interested in knowing more. Head to the Google homepage today and you’ll see a flame-haired woman gazing into the distance. The Doodle was created in honour of German actress Renate Krößner, who would have turned 78 today. Krößner was propelled to international stardom after playing the titular role in Solo Sunny – a 1980 East German film about a rebellious singer, which struck a chord with audiences around the world. Her performance was met with universal critical acclaim, earning her the Best Actress Silver Bear award at the Berlin International Film Festival — the first for an East German production. The West was a liberal democracy, while the East was essentially a communist state. Permission had to be granted to anyone who wished to leave the socialist territory, which Krößner obtained in 1985. After moving to West Berlin, Krößner became a mainstay on hit West German TV shows and continued to wow film critics, racking up a number of prestigious accolades including an RTL Golden Lion. In 1991, Krößner was a jury member at the 41st Berlin International Film Festivaland she continued acting into the 2000s. She died following a short illness on 25 May, 2020 at the age of 75.
